What the Numbers on the Back Mean

Flip over a piece of flatware and you will see a number. 18/10, 18/8, 18/0. The first number is chromium for rust resistance. The second is nickel, which gives it that bright, shiny look. 18/0 has no nickel. It is magnetic, it can look a bit gray, and it is cheap. 18/10 has more nickel, so it is whiter and more resistant to corrosion, but it is also softer. The industry loves to confuse you with these numbers. What they do not tell you is that the quality of the steel matters less than the way the piece is formed. A thick 18/0 fork that is forged is better than a thin 18/10 fork that is stamped.

Stamped vs. Forged: The Fork Test

Here is a test you can do at a store. Hold a fork by the handle and tap it gently against the counter. A thin, stamped piece will ring like a bell. A solid, forged piece will make a dull thud. The ringing means the metal is stretched thin and has no mass. The thud means it is solid. Most cheap sets are stamped out of a sheet of metal like a cookie cutter. This is fast, it wastes no material, and it produces a product that is flat and weak. Forging means heating the metal and pressing it into shape under tons of pressure. And that is what makes your good forks taste like metal. The fix is simple and boring: wash by hand, dry immediately. The Matching Obsession Is Recent

Your grandmother did not have a matching set. She had her good silver for company and a big jar of everyday forks that were all different. That was normal. The idea that every single piece must match perfectly is a marketing invention from the 1950s, when the big silver companies needed to sell full sets to the new suburban middle class. The trick worked. Now you have a drawer full of mismatched pieces and a feeling of guilt every time you open it. Here is the counterintuitive move: stop trying to make it match. Pick a pattern you love, buy four of those in a service for one, and then never buy a full set again. Mix in a few vintage forks from a flea market. The table looks better, and you stop caring about the one spoon that has a scratch in it.

When you spend fifteen dollars on a fork, here is what you are paying for: first, the weight of the metal. Second, the hand-finishing on the edges so it does not cut your lip. Third, the fit and finish of the handle to the bolster. And fourth, the design. The design is not just about looks. It is about the angle of the bowl of the spoon and the curve of the fork tines. A good designer spends a year on the curve of a spoon so that it fits the inside of your mouth without hitting your teeth. That is a real thing. In a year, you will have a service for eight that you actually reach for, not a drawer full of junk you avoid.
